We are all guilty of opting for an extra 30 minutes in bed over eating a nutritional breakfast before heading out for the long day ahead. Not having enough time to prepare and eat a good breakfast is often an excuse we fall back on, but the team from MyNutriCounter is on a mission to help people improve their health, well-being and mood through easy and nutritious meal recipes.
MyNutriCounter is the brainchild of bloggers Krazy Kiwi and Shy Strawberry who launched the website back in October 2015. Thanks to their delicious and healthy recipes, the pair went on to win the Best Health and Social Care Blog at the UK Blog Awards this year. The MyNutriCounter team have also recently launched the e-book ‘A Healthier Happier You’ on Amazon, which is full of recipes for meals and snacks for any time of day; even better, all the recipes featured take less than 30 minutes and are healthy and tasty too!
One of the breakfast recipes that stood out to us was the Oat Breakfast Cups. The crispy oat cups are filled with smooth Greek yoghurt and finished off with a selection of fruit, nuts and honey for a fantastically easy way to start the day. These little breakfast treats look seriously tasty and take less than 15 minutes to prepare a batch; they’re also easy enough to take on your morning commute and eat on the go.
If you feel like experimenting, fill the oat cups with anything including nuts, seeds and alternative fruits to keep breakfast exciting and fresh each morning.
This recipe is high in carbohydrates, fibre, vitamin C, copper, manganese and thiamine as well as being gluten free.

Oat Breakfast Cups Recipe
Makes 6 cups
Preparation time: 5 mins. Cooking time: 10 mins
Ingredients
- 80g breakfast oats
- 1 banana
- 6 tbsp. Greek yoghurt
- 2 1/2 tbsp. honey
- 1 tsp. vanilla extract
- 1 tsp. cinnamon
Optional toppings
- Strawberries
- Peach
- Blueberries
- Raspberries
- Sea buckthorn powder
- Oats
- Honey
Directions
- Preheat the oven to 175C.
- Mash the banana, then mix in the honey, vanilla extract, oats and cinnamon until well combined.
- Place 1 heaped tablespoon of the mixture into each of your baking tins and press down along the sides and bottom to create your cups.
- Bake for 10 minutes.
- Remove from the oven and add 1 tablespoon of Greek yoghurt to each cup, then top with your choice of fruit, honey, oats and sea buckthorn powder.
